 1 tsp Canola oil
 1 cup onionChopped
 2 tbsp JalapenoDiced
 2 tsp garlicminced
 5 cups Chicken brothLow sodium
 1 ½ cups ChickenBoneless, skinless, chicken breasts, cut in strips
 1 cup TomatoDiced
 1 cup BeansSoaked and cooked
 1 cup Corn

Heat oil in a large sauce pan over medium heat. Add onion and jalapeno; cook, stirring often until they are tender, about 5 minutes. Stir in garlic; cook 30 seconds more.

Add broth increase heat to high, and bring to a rapid simmer. Add chicken and cook until no longer pink, about 3 minutes.

Stir in tomato corn and beans bring back to a simmer, season with salt and pepper to taste, and serve hot. Garnish with cilantro
